Canato Marco Description

The Winery "Canato"is on the hills of Vignale Monferrato, the vineyards are grown with traditional metods to produce high quality Grapes that lead to Vintage Wines: Barbera, Grignolino, Chardonnay, Freisa with characteristic of typical originality and unique organoleptic quality as rarely happens to meet. The Winery "Canato " is located on the hills of Vignale Monferrato.At its feet lies the ancient "Fons Salera " (Salera spring),at ist time famous for its precious spa water.In 1700 the historical estate belonged to the nuns of the St.Barthole- mew cloister.Later in 1740 the Bishop of the own of Casale Monferrato,Monsignore P.G.Cavadossi,bought the estate called "Baldea "in Vignale Monferrato. In the 1950s the Canato family acquired the estate on lease. The family realized the pro . tability of the estate.Since it had excellent quality soil for wine-growing they purchased the whole property. Marco and Roberto Canato managed the entire enterprise consist- ing of 13 hectares of vines,where the vineyards are cultivated with rational methods in order to produce quality grapes and therefore noble wines with characteristics of origin and type.

Barbera del Monferrato D.O.C.G. Superiore "Rapet"

Tasting Notes: Red still wine REFINEMENT: 12-14 months in oak "barriques", completing maturation in bottles.Suitable for ageing. COLOUR Deep red with violet reflections. BOUQUET Intensely vinous, with a fragrance of ripe fruit.
Grape varieties: 100% Barbera grapes
Food Pairings: Uncork at least half an hour before serving at a temperature of 18º C. Suitable for tasty dishes, rich first courses, red meat, mature and fermented cheese.
Total production: 4.000 bottles

Barbera del Monferrato D.O.C.G. Superiore "La Baldea"

Tasting Notes: Red Still wine REFINEMENT 6/8 months in oak tonneau completing maturation in bottles.Suitable for ageing. Drink within 5/6 years from bottling.
Grape varieties: 100% Barbera grapes.
Food Pairings: Uncork at least half an hour before serving at a temperature of 18ºC. Suitable all through the meal, with elaborate first courses and second courses made of red meat or game (both feathered and furred).
Total production: 15.000 bottles

Barbera del Monferrato D.O.C. "Gambaloita"

Tasting Notes: Colour deep ruby red. Bouquet fruity, with notes of underwood berries. Red still wine REFINEMENT Some months in basins, then completing its ripening in bottles.
Grape varieties: 100% Barbera grapes.
Food Pairings: Just uncorked when it's new, at a temperature of 16º-17º C. Ideal with roasted meat (white and red), charcuterie, middle-mature cheese.
Total production: 30.000 bottles

Grignolino del Monferrato casalese D.O.C."Celio"

Tasting Notes: Red still wine REFINEMENT Some months in basins, completing maturation in bottles. Bouquet characteristic, with notes of white pepper and peanuts.
Coulor: Soft ruby red with a touch of orange
Grape varieties: 100% Grignolino grapes.
Food Pairings: Just uncorked, at a temperature of 16º-17º C. PAIRING With first courses, white meat, game, fish and shell-fish.
Total production: 10.000 bottles produced.

Piemonte Chardonnay D.O.C. "Piasì"

Tasting Notes: Long aging in the bottle is not necessary, however the underlying structure supported by the acidity allow for aging.
Coulor: Vivid straw-yellow with green reflections.
Grape varieties: 100% Chardonnay grapes.
Food Pairings: Rich pastas with sauces of meats and liver; Fritto misto of Piedmont, bollito misto with salsa; Bagna Cauda.
Total production: 5.000 bottles produced.
